This is my new obsession...

Cookies & Coconut Cream Pops... Mind. Blown. I was scoping Pinterest for some new blog ideas when I came across theviewfromthegreatisland.com & her recipe (you can click the link here for her website & original post). This recipe is pretty simple, makes 4-5 pops & therefore has become my new favourite summer snack. Also, it's completely vegan! Yes, Oreo cookies are 100% vegan.


Ingredients:

  • 14 oz can coconut milk
  • approx.15 Oreo cookies
  • 1/2 teaspoon of vanilla extract

What to do:

  1. Shake the can of coconut milk. Pour it into a small mixing bowl & add the vanilla.
  2. Take 6-8 cookies and crush them. I put them in a baggie & then used a rolling pin to crush the cookies.
  3. Add the crushed cookies into the coconut milk, don't mix too much, just lightly mix.
  4. Spoon a small amount of the mixture into the bottom of 5 popsicle molds.
  5. Insert a whole cookie into each of the molds. Carefully insert a popsicle stick into the molds, the stick will fit right into the filling of the cookie to stand by itself.
  6. Fill the molds with the rest of the cookies and cream mixture.
  7. Freeze until solid.
  8. To remove the popsicles, fill your sink with hot water, place the mold up to, but not over the top lip & hold for 15 seconds. Remove from the water & then gently remove the popsicles.
  9. To store for later, wrap each popsicle well with waxed paper & put in freezer baggies.
