MALIBU RUM CUPCAKES.

Hey Guys.

So today is Earth Day (yay!) & I decided to make these adorable mini cupcakes infused with Malibu Rum. These cupcakes are adorable, they look like little, tiny Earths.


HERE'S WHAT YOU NEED: (70 mini cupcakes)

  • 2 medium bowls
  • 2 small bowls
  • red frosting gel
  • green & blue food colouring
  • your favourite frosting
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 12 tablespoons (1 1/2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoons vanilla extract
  • 1 1/4 cups milk (preferably whole)
  • 1 teaspoon (or more) of Malibu Rum

WHAT TO DO:

  1. Preheat the oven to 375°. Line cupcake pan with paper liners & set aside.
  2. In a medium bowl, sift together the flour, baking powder, & salt.
  3. In a large bowl beat the butter & the sugar until light & fluffy (about three minutes). Beat in the eggs one at a time, then beat in the vanilla extract & rum.
  4. Add one-third of the flour mixture & beat to combine. Add half of the milk & beat to combine. Add another third of the flour, then the remaining milk, then the rest of the flour (beating to combine after each addition).
  5. Take the two small bowls & split the batter evenly. Add a few drops of food colouring to both bowls (green in one, blue in the other) & mix together.
  6. Using a teaspoon, scoop a little bit of green batter & place on one side of the liner. Now take the blue batter (just a little more than the green), place on the other side of the liner & overflow onto the green batter. Repeat until about 2/3 full.
  7. Bake for 10-15 minutes, or until the cupcakes spring back when pressed lightly. Transfer to a wire rack to cool completely.
  8. Finally, take your favourite frosting & lightly glaze the tops of the cupcakes. Now taking a red gel frosting, draw a tiny heart on each of the cupcakes.
