COCONUT CHIA OATMEAL.

INGREDIENTS:

  • 1 can of coconut milk
  • 1-1/2 cups of oatmeal
  •  banana sliced (optional)
  • 1 teaspoon of coconut oil
  • 2 tablespoons chia seeds
  • dash of cinnamon
  • 1/4 cup of coconut shreds

DIRECTIONS:

First, I let the coconut milk come to a boil. Then I turn down the stove to a medium & add the oatmeal, banana, coconut oil, cinnamon & chia seeds. Continue stirring for about 5 minutes. You don't want to stir the mixture to the point where it's runny, you want it to be thick! Once all the ingredients are well mixed & still thick, it's ready! I then add the coconut shreds, brown sugar & some fruit on top (more banana or blueberries). Personally, I think it adds more flavour to the oatmeal.
