My favourite dessert is anything s'mores...

But I live in the city so a campfire is not always accessible. So I figured, why not make Vegan S'mores Cookies? Genius. The simple part of making this recipe vegan is the marshmallows (gelatine) & graham crackers (honey). You can find these at any organic food store. The difficult part is the egg replacement which is the chia seed & water mixture. If you don't care about making these cookies vegan, go ahead & throw an egg in there instead of the seeds. But I encourage you to try out the vegan recipe!


INGREDIENTS:

  • 2⅔ cups all-purpose flour
  • 2 tsp cornstarch
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 cup earth balance, softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 1 tablespoon ground chia seeds, mixed with ¼ cup water
  • 1 tablespoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 1 cup crushed graham crackers

INSTRUCTIONS:

  1. Preheat oven to 350 degrees. Line large baking sheet with parchment paper.
  2. In a large bowl combine flour, cornstarch, baking soda & salt. 
  3. In a separate bowl mix butter & both brown & granulated sugar together until well combined. Add chia seed & water mixture & vanilla. Stir to combine.
  4. Combine wet & dry ingredients until well mixed. Stir in chocolate chips, marshmallows & crushed cookies.
  5. Roll dough into Tablespoon sized balls & place on parchment baking sheet. Bake for 10-12 minutes, until golden brown.
