And the yolk I have on the corner of my mouth? Avocado toast has to be the best breakfast food ever invented. You can customize the recipe depending on your flavour of choice! I was never the person to get up & make myself breakfast in the morning. I always felt like it made me feel sick or I was just too lazy. But since having more of a schedule, I realized breakfast really is the most important meal of the day.

I’m sorry if you were looking for an all vegan, healthy smoothie bowl or some kind of weight loss miracle food. But this is a simple, avocado toast post. (ha!) What this post is really about, is to inspire those like me (who don’t make themselves breakfast in the morning), to start! This meal takes less than ten minutes to make & it is absolutely delicious. So let’s break down the ingredients in this yummy breakfast:


avocado.

The good kinds of fats! In fact, 77% of the calories in it are from fat, making it one of the fattiest plant foods in existence. Oleic acid in avocados reduces inflammation & has beneficial effects on genes linked to cancer. Avocados contain more potassium than bananas & help lower cholesterol.

Garlic.

Though I use garlic powder, garlic is known to lower blood pressure & cholesterol, is an anti-inflammatory, reduces the risk of cancer & creates a stronger immune system.

Nutritional Yeast.

Nutritional Yeast is a vegan food product that honestly, tastes like cheese. It’s helps to protect against oxidative damage, lower cholesterol & boost immunity while adding extra protein, vitamins, minerals & antioxidants.

Feta Cheese.

Feta cheese contains a friendly bacteria called, Lactobacillus plantarum. This type of bacteria can help strengthen the immune system & promotes gut health by protecting the intestinal tract from diseases like E. coli & Salmonella. Feta does contain a higher content of salt, so don’t go overboard.

Whole Wheat Bread.

There’s a lot of conversation about whether bread is really healthy for you. I argue that eating whole grain bread is a million times better than eating white bread, everything really is good in moderation. Eating bread for breakfast allows me to feel full longer than if I ate a couple eggs. Whole grains contain vitamins, minerals, protein, fibre & other healthy plant compounds & it may even lower your risk of heart disease.

Eggs.

Scrambles, over easy, poached…you name it! Eggs are essential in my diet & I can’t imagine eating breakfast without them. Eggs contain almost every nutrient you need: folate, vitamin B5, B12, B2, B6, D, E, K, calcium & zinc. Choline is also found in eggs & are used to build cell membranes that produce signaling molecules in the brain. Eggs are also fairly high in animal protein & contain all the essential amino acids that humans need.


Recipe.

  1. Start off by throwing a couple pieces of bread in the toaster & crack 2 eggs in a frying pan on low to medium heat. Add a couple dashes of salt & pepper to the eggs while they cook.

  2. Cut your avocado in half & scoop both sides into a bowl. Add a couple dashes of garlic powder, nutritional yeast. Mix.

  3. Go back to your eggs & carefully flip them over to create over easy eggs.

  4. Once the toast has popped, spread on the avocado mixture. Sprinkle feta cheese on top.

  5. Finish by adding the eggs on top.

  6. Enjoy!
